Francisco Javier Parreño ‘Paco’

A life devoted to culinary art

With roots in Valencia, Spain, and experience across Europe, Chef Paco brings more than skill to La Nacional—he brings soul. A graduate in Hospitality and Tourism, Paco has cooked his way through France, Germany, and some of the most acclaimed 5-star hotels and Michelin-starred restaurants in Spain.

Before dedicating himself fully to La Nacional, Paco owned and led Delicat, one of Valencia’s most innovative restaurants. Today, his mission is simple yet profound: to share the true flavors of Spain with every guest who walks through our red door.
